Three years and an abundance of anticipation later, JimmyRum is thrilled with the release of their first Victorian-produced rum.
Crafted at the distillery in the Dromana industrial estate, the new creations - RumRum and Cask Strength RumRum - have undergone a significant distilling journey before their reveal to the public.
Produced from Australian-made and owned molasses, the rum has been distilled in the on-site Italian copper still and aged for three years in 200-litre ex-bourbon barrels.
This aligns with Australia's 1906 rum legislation requiring a cane spirit to be aged in a barrel for two years to be classified as rum.
For Founder James McPherson and the extended JimmyRum team, this achievement represents an exciting and notable milestone for the business - Victoria’s first dedicated craft rum distillery.
“From my mad 2am 'light bulb moment' and a dream to build Victoria's first dedicated craft rum distillery, to now bottling our first Mornington Peninsula produced rum, this moment is truly what JimmyRum was put together to do - produce premium Australian craft rum,” he said.
In particular, the new release continues to highlight the exceptional quality of Australian-produced rum in an ongoing mission to change how Australians think about distilled liquor.
While new batches of RumRum and Cask Strength RumRum are set to arrive on the scene in four to six weeks, there is still the opportunity to enjoy the tastes of the first batch at the distillery.
Alongside their extensive range of cane spirits and blends and imported rums, JimmyRum Distillery offers guided tastings, masterclass experiences, and a seasonal menu showcasing local Mornington Peninsula businesses.
